Make this simple Cranberry Relish and you will never serve it from the can again! Fresh cranberries, pineapple, walnuts and sugar combine to make this beautiful dressing…it is the perfect compliment to a roast turkey.
Ingredients:
One 10 ounce can of crushed pineapple
Three cups of fresh cranberries
Half cup of granulated sugar
Half cup of chopped walnuts
Juice of one lemon

- You will need 3 cups of fresh cranberries ( equal to one 12 oz bag), 1/2 cup of chopped walnuts, 1/2 cup sugar.
- One ten ounce can of crushed pineapple – drained over a measuring cup. Save the liquid and add enough water to equal one cup of liquid.
- In a medium size sauce pan, combine Liquid, cranberries and sugar. Stir over high heat until mixture comes to a boil. Continue to stir , lower heat to medium , until most of the cranberries pop and mixture becomes thick. About 8-10 minutes.
- Mixture will look like this ….Remove from heat.
- Now you will add the reserved pineapple, chopped walnuts and juice of one lemon.
- Mix together and cover. Cool in the refrigerator. You can make this relish two days before serving.
- How beautiful does that look…and it tastes even better!
