How do I love thee?
Let me count the ways.
I love thee to the depth and breadth and height
my soul can reach…

Looking for the perfect dessert to top off that special Valentine dinner?
Look no further, for this is the best crumb cake recipe ever! Bake up a tray of this cake and that special someone just may fall even more madly in love with you…it’s that good!
The recipe below is for the crumb cake that my mother used to bake for us. Lately I have moved towards healthier ingredients and baking from scratch…but there are times when you just can’t substitute. My mother always insisted on making her cakes using Pillsbury Yellow Cake mix, and for this recipe I have to agree…use the box mix…nothing compares.
(Hey…it also makes it super simple to whip this up when you are short on time…)

- Pre-heat your oven to 350 degrees ( or according to the package of cake mix that you are using.) Start by making the crumbs. You will need 2 cups of all purpose flour, 3/4 cup of granulated sugar, 1/4 teaspoon of salt, 3 tablespoons of ground cinnamon, and 2 sticks of butter ( 16 tablespoons ).
- In the bowl of your electric mixer fitted with the paddle attachment start to mix the crumbs starting on the lowest speed.
- The crumbs will take about 4-5 minutes to come together when you mix them slowly, so don’t worry …just keep mixing.
- This is what your crumbs will look like when they are ready. This should take about 4 minutes.
- Place the crumbs in a separate bowl and set aside.
- Rinse the bowl of the electric mixer and get ready to make the cake. Be sure to prepare the 9×13 pan using a baking spray or olive oil.
- Mix the cake according to the package directions.
- I usually mix mine using the paddle attachment for 2 minutes longer than suggested on the box. This seems to make the batter super light and fluffy.
- Spread the batter into the prepared pan and bake at 350 degrees for 20 minutes.
- At the 20 minute mark remove the pan from the oven to a cooling rack and crumble the yummy crumbs on top of the cake.
- The crumbs will come together nicely as you pick them up to scatter them on top of the cake…
- Yummy!!….Now you will place the cake back into the oven to finish baking for another 15-20 minutes.
- Those crumbs are the best part!
- Cut into nice size pieces and dust with confectioners sugar. One cake will make 12 good size servings.
- You may want to make a double batch…this one is a winner!
